The Professional Baker's Carrot Cake Base Recipe

Method

  1. Preheat your oven to 160°C Fan (180°C conventional/Gas Mark 4). Grease and line two 8-inch (20cm) round deep cake tins with baking parchment.

  2. In a large mixing bowl or the bowl of a stand mixer, combine the sunflower oil, soft light brown sugar, and eggs. Whisk on medium speed for approximately 2-3 minutes until the mixture is well-combined and slightly thickened.

  3. Sift together the self-raising flour, bicarbonate of soda, cinnamon, ginger, and mixed spice in a separate bowl.

  4. Gently fold the dry ingredients into the wet mixture using a large metal spoon or spatula until no streaks of flour remain. Be careful not to overwork the batter.

  5. Stir in the finely grated carrots and the chopped walnuts until evenly distributed throughout the sponge mixture.

  6. Divide the batter equally between the two prepared tins and smooth the tops.

  7. Bake in the centre of the oven for 30-35 minutes, or until the sponges are well-risen, golden brown, and a skewer inserted into the middle comes out clean.

  8. Allow the cakes to cool in their tins for 10 minutes before turning out onto a wire rack to cool completely before filling or frosting.

Notes

Use the fine side of your grater for the carrots; large chunks can create structural weak points in tiered celebration cakes.

For the best flavour, ensure your spices are fresh; old ground cinnamon loses its warmth and depth.

This cake is specifically designed to be sturdy enough for stacking. If you need it even firmer, you can replace 50ml of oil with 50g of melted unsalted butter.

Always line the sides of your tins with parchment paper to ensure a clean, smooth edge for professional icing application.
