Rich Chocolate Sponge Cake Recipe for Multi-Tiered Layering

Method

  1. Preheat your fan oven to 160°C (180°C conventional). Grease and line two 8-inch (20cm) deep sandwich tins with parchment paper on the base and sides.

  2. In a small bowl, whisk the cocoa powder with the boiling water to create a smooth, thick paste. This 'blooms' the cocoa for a more intense chocolate flavour. Set aside to cool slightly.

  3. Using a stand mixer fitted with the paddle attachment, cream the softened butter and caster sugar together on medium-high speed for at least 5 minutes until the mixture is pale, fluffy, and significantly increased in volume.

  4. Beat in the eggs one at a time, adding a tablespoon of the flour with each egg to prevent the mixture from curdling. Ensure each egg is fully incorporated before adding the next.

  5. Fold in the cooled cocoa paste and vanilla bean paste until well combined.

  6. Sift the remaining self-raising flour and baking powder into the bowl. Using a large metal spoon or a silicone spatula, gently fold the dry ingredients into the wet mixture using a figure-of-eight motion. Do not overmix.

  7. Gently stir in the milk to loosen the batter to a 'dropping consistency' (it should fall off a spoon with a slight tap).

  8. Divide the batter equally between the prepared tins and level the tops with an offset spatula.

  9. Bake in the centre of the oven for 35-45 minutes, or until a skewer inserted into the centre comes out clean and the sponge springs back when lightly pressed.

  10. Allow the cakes to cool in their tins for 10 minutes before turning out onto a wire rack to cool completely. For best results when layering, wrap the cooled sponges in cling film and chill in the fridge for 2 hours to firm up the crumb before slicing.
