Method
Ensure your stand mixer bowl and whisk attachment are completely grease-free by wiping them with a little lemon juice or white vinegar.
Set up a bain-marie by placing a heatproof bowl over a saucepan of gently simmering water, ensuring the base of the bowl does not touch the water.
Add the egg whites and caster sugar to the bowl. Whisk constantly by hand until the sugar has completely dissolved and the mixture reaches 70°C on a digital thermometer. The mixture should feel smooth, not gritty, when rubbed between your fingers.
Transfer the bowl to your stand mixer. Using the whisk attachment, beat on high speed for approximately 10-15 minutes until the meringue is thick, glossy, and has formed stiff peaks. The bowl must feel completely cool to the touch before proceeding.
Switch to the paddle attachment. With the mixer on medium-low speed, add the cubed butter one piece at a time, allowing each to incorporate before adding the next.
If the mixture looks curdled or soup-like, keep beating; it will eventually emulsify into a smooth, thick cream. Once smooth, add the vanilla bean paste and salt.
Turn the mixer to its lowest speed and beat for a further 2-3 minutes to remove any large air bubbles, resulting in a dense, silky finish perfect for smoothing onto cakes.
Notes
Temperature is key: if the meringue is too warm when you add the butter, it will melt. If this happens, chill the bowl for 15 minutes and try beating again.
For the whitest buttercream, beat the butter on its own for several minutes before adding to the meringue, or add a tiny drop of violet food colouring to neutralise yellow tones.
Always use a paddle attachment for the final stage to ensure a bubble-free finish, which is essential for professional sharp edges.
