Method
Warm the milk in a small saucepan until just simmering, then remove from heat and add the saffron strands to steep for at least 20 minutes until the milk is deep yellow.
Preheat your oven to 180°C (160°C fan/Gas Mark 4) and grease and line two 20cm round sandwich tins with greaseproof paper.
Cream together the softened butter and caster sugar in a large bowl until the mixture is exceptionally pale and fluffy.
Beat in the eggs one at a time, adding a tablespoon of flour with each egg to prevent the mixture from curdling.
Gently fold in the remaining self-raising flour and the saffron-infused milk until the batter is smooth and well-combined.
Divide the batter equally between the prepared tins and bake for 25-30 minutes, or until a skewer inserted into the centre comes out clean.
While the cakes are cooling slightly in their tins, prick the surfaces with a toothpick and drizzle 2 tablespoons of honey over the warm sponges.
For the filling, whisk the double cream, mascarpone, and icing sugar together until thick enough to hold its shape, being careful not to over-beat.
Once completely cool, sandwich the sponges together with half the mascarpone cream and use the remaining cream to coat the top in a rustic, textured fashion.
Finish with a final generous drizzle of honey and optional edible flowers or honeycomb pieces for a truly festive appearance.
Notes
Ensure your butter is at true room temperature (soft enough for a finger to leave an easy indent) to achieve the best aeration.
Steep the saffron in milk the night before for an even deeper colour and more pronounced aromatic profile.
Do not over-whisk the mascarpone filling; it can turn from thick to grainy very quickly due to the high fat content.
Use a local wildflower or clover honey to ensure the floral notes complement the saffron without overpowering it.
