Professional British Vanilla Bean Celebration Cupcakes

Method

  1. Preheat your oven to 180°C (160°C Fan/Gas Mark 4) and line a 12-hole muffin tin with high-quality paper cupcake cases.

  2. In a large mixing bowl or stand mixer, cream the softened unsalted butter and golden caster sugar together for at least 5 minutes until the mixture is pale, light, and doubled in volume.

  3. Beat the eggs lightly in a separate bowl with the vanilla bean paste, then add to the butter mixture a little at a time, beating well after each addition to prevent curdling. If it starts to split, add a tablespoon of the flour.

  4. Gently fold in the sifted self-raising flour using a large metal spoon or spatula until just combined, taking care not to knock out the air. Stir in the milk to reach a soft dropping consistency.

  5. Divide the batter evenly between the cupcake cases, filling them about two-thirds full.

  6. Bake in the centre of the oven for 18-20 minutes, or until the sponges are golden and spring back when lightly pressed. Transfer to a wire rack to cool completely.

  7. To make the buttercream, beat the butter for 5 minutes until almost white. Gradually add the icing sugar in two stages, beating thoroughly between each. Add the vanilla bean paste and double cream, then whip for a further 3 minutes until silky and aerated.

  8. Pipe the buttercream onto the cooled cupcakes using a star nozzle, starting from the outside and spiralling inwards to create a classic celebration swirl.

Ensure all ingredients, especially eggs and butter, are at room temperature to achieve a stable emulsion.

Use vanilla bean paste rather than essence for those beautiful black specks and a deep, authentic flavour.

Do not overbeat the flour; folding it in gently ensures the cupcakes remain light and airy rather than tough.

For the whitest buttercream, beat the butter on its own for a long time before adding any sugar.
