Professional Seedless Raspberry Jam Filling Recipe for Celebration Cakes

This professional-grade raspberry preserve is designed specifically for the rigours of tiered celebration cakes. By removing the seeds and utilizing jam sugar, we achieve a translucent, jewel-toned filling with the structural integrity to support heavy sponges without compromising on that sharp, summer fruit punch.

Method

  1. Place two small saucers into the freezer; these will be used to test the jam's setting point later.

  2. Place the raspberries and lemon juice into a large, heavy-based saucepan or preserving pan. Heat gently over a medium-low flame for 5-7 minutes until the fruit breaks down and becomes liquid.

  3. For a professional seedless finish, remove the pan from the heat and press the warm fruit mixture through a fine-mesh sieve into a clean pan. Use the back of a ladle to extract as much pulp as possible, then discard the seeds.

  4. Add the jam sugar to the sieved raspberry pulp. Stir over a low heat until every crystal of sugar has completely dissolved; do not allow it to boil before this stage.

  5. Add the knob of butter to the pan—this helps to dissolve any foam—and increase the heat to a high setting. Bring the mixture to a full rolling boil (a boil that cannot be stirred down).

  6. Boil rapidly for 5 to 8 minutes. To test for a set, remove the pan from the heat and place a teaspoon of jam onto one of your chilled saucers. Let it sit for 60 seconds, then push it with your finger; if it wrinkles, the jam is ready.

  7. Once the setting point (105°C if using a thermometer) is reached, skim any remaining foam from the surface and pour the jam into a warm, sterilised jar. Allow to cool completely and set overnight before using in your cakes.

Notes

Always use jam sugar with added pectin for cake fillings to ensure the jam is firm enough to withstand the weight of cake layers.

To keep your cake pristine, always pipe a buttercream 'dam' around the edge of your sponge before filling the centre with jam.

Ensure the jam is completely cold before use; warm jam will melt your buttercream and cause the cake layers to slide.

If you prefer a more rustic texture, you can skip the sieving process and leave the seeds in.

Questions

Can I use frozen raspberries for this filling?
Absolutely. Frozen raspberries are often picked at their peak and work perfectly. There is no need to defrost them first; just add them straight to the pan.
Why did my jam not set properly?
This usually happens if the jam hasn't reached the setting point of 105°C or if it wasn't boiled rapidly enough. You can re-boil it with a little extra lemon juice to help activate the pectin.
How long will this jam keep?
In a properly sterilised, airtight jar, this jam will keep for up to 6 months in a cool, dark cupboard. Once opened, keep it in the fridge.
How much jam do I need for an 8-inch cake?
For a standard two-layer 8-inch Victoria Sponge, you will typically need about 4-5 tablespoons of jam for a generous, professional layer.
