These are not your average buns; they are professional-standard celebration cakes in miniature. Featuring a rich, 'bloomed' cocoa sponge for depth of flavour and topped with a stable, glossy chocolate Swiss meringue buttercream, they offer the perfect balance of sophistication and indulgence.

Method

  1. Preheat your oven to 180°C (160°C Fan/Gas 4) and line a 12-hole muffin tin with high-quality greaseproof paper liners.

  2. In a small bowl, whisk the cocoa powder with the boiling water and milk to form a smooth paste; this 'blooms' the cocoa for a more intense flavour. Set aside to cool slightly.

  3. In a large stand mixer, cream together the softened butter and golden caster sugar for at least 5 minutes until the mixture is pale, light, and doubled in volume.

  4. Gradually add the beaten eggs one at a time, ensuring each is fully incorporated before adding the next. If the mixture begins to curdle, add a tablespoon of the flour.

  5. Sift the self-raising flour and baking powder over the wet ingredients. Add the cocoa paste. Gently fold the mixture together using a large metal spoon until just combined, being careful not to knock out the air.

  6. Divide the batter equally among the liners. Bake for 18-20 minutes or until a skewer inserted into the centre comes out clean. Transfer to a wire rack to cool completely.

  7. To make the Swiss Meringue Buttercream, place egg whites and sugar in a heatproof bowl over a pan of simmering water. Whisk constantly until the sugar has dissolved and the mixture reaches 70°C.

  8. Transfer to a stand mixer and whisk on high speed until a stiff, glossy meringue forms and the bowl feels cool to the touch (approx. 10 minutes).

  9. Switch to the paddle attachment. On medium-low speed, add the cubed butter one piece at a time. The mixture may look curdled, but continue beating until it becomes thick and silky. Fold in the cooled melted chocolate.

  10. Fit a piping bag with a Star nozzle (like a 1M or 2D). Pipe generous swirls onto the cooled cupcakes and finish with a light dusting of cocoa or gold leaf.
